Potato Soup* (Like a chowder)

Ingredients
1/4 cup butter
2 cloves garlic smashed and diced
1 large onion chopped
2 stalks celery diced
1/4 cup flour
3 cups chicken broth
2 cups red potatoes, cubed with skin left on
2 teaspoons salt
3 cups spinach
1/2 cup whole milk
* Diced cooked ham or chicken can be added


Directions
Melt butter in a pan.
Add onions and celery.
Cover and cook until tender - about 15 minutes.
Stir occasionally.
Blend in the flour and add potatoes and broth. Stir constantly until boiling.
Turn down heat to medium and simmer for 30 minutes.
Add spinach cook 2 minutes then add the milk.
* Top with shredded Swiss if you like
